Memorial Day Weekend

Hope everyone had a wonderful Memorial Day Weekend, paying our respects to our fallen heroes.


This past weekend was awesome! Had a great time in the sun and with friends. We started off the weekend at Sam’s boat with some crawfish, then on to GCS’s for some dancing. Saturday we hung out at the pool for a couple hours then went over to the Mills’ BBQ. Sunday we braved the weather and went tubing. So glad we did because it turned out to be a gorgeous day! Monday we rented a boat with a few other peeps and hung out at Devil’s Cove. The weather was perfect and the water felt oh so gooood. To finish off the wonderful weekend we dined at Pluckers.

This week/end will be equally busy. Flying to Ohio Wednesday morning for my cousins Wedding and all the events that go along with tying the knot. :-)

#15 - home cooked meals (55/143)


Last night we made homemade pizza! I haven’t made homemade pizza in years..probably not since I lived at home with mom and dad (Yah yah I know…crazy huh?). We made two square pizza’s and everyone created their own special pizza with the toppings of their choosing. Loving the variety here. :-D  It did get a little interesting though when Malek cooked them just a little longer in the oven then they should have been and all the fire alarms in the house went off. Don’t worry, the pizza’s were still good. They were only slightly burned along the edges. :-P  We enjoyed a nice family dinner, after the smoke cleared.

#15 - home cooked meals (54/143)

After dinner Thursday night we decided to let the kids pick a meal. Evan wanted to make his crab cakes so we decided Saturday would be perfect for him to cook for us. We invited Malek’s mom and Karen over for the feast. Evan made the crab cakes, Malek cooked the asparagus and green beans, I handled the mashed potatoes, Karen made homemade tartar sauce and Emma set the table. The crab cakes were delicious and the asparagus was a surprise hit! The homemade Texas martini’s with olives were a smash as well. We capped off the evening with some chocolate ice-cream and TV.


2 meals in 1 week!

Scramble!

#34 - Put my golf lessons to work and actually play 9 or 18 holes

Today I will be playing in my first scramble!  It's for the Institute of Internal Auditors – Austin Social/Networking Event.  I haven't touched my golf clubs in 2 summers or so (last time was when Monica and I took those 4 golf lessons back in 2007??).  I'm looking forward to it.  :-D  For $34 we get a round of golf, cart, range balls and lunch.  Not sure if we are playing 9 or 18 holes so I hope I can last (92 degrees today!).  I brought my camera to capture the event and will update this post with the results.  There are 11 teams and we'll be playing at Blackhawk Golf Club.

** Updates **

I had a great time golfing!  We ended up only playing 8 out of 18 holes, our group of 4 was ready to get out of there by 4:30pm, plus the group behind us was very impatient.  :-P  I definitely would like to go back again soon and work on my swing, but not to Black Hawk.  Black Hawk's course was horrible, weeds everywhere, paths flooded, etc.

I made my childhood favorite dinner last night: chicken with wine, rice pilaf and salad.  Everybody loved it!  Even the kids had a couple helpings each.  I couldn't believe it!  :-D

Weekend Updates

#15 – home cooked meals (52/143)
Thursday night I made tuna casserole for everyone.  It was yummy!  Emma even ate 3 helping all by herself!  :-)  Followed it up with choc banana strawberry shakes and Uno.

Friday I planned a charity event at work.  3x3 volleyball tournament benefiting SafePlace.  We raised ~$350.  :-)  Not bad at all.  My mom always said I needed to be more involved with charity and volunteering and now that I'm on Community Involvement Team at work I'll have plenty of opportunities to help out. 

Saturday night we ate dinner at Gumbo's in RR with Malek's mom for mothers day.  I love Gumbo's!

Sunday we did some work in the garage, took things to storage, etc.  I can finally park my car in the garage again!  Yay!  Around 1pm we decided to take a break and went to the pool for a couple hours, then it was off to our Sunday night volleyball game.

Hitting the gym

#44 - Work out at least 3x's a week

Last week I made it to the gym 4x's!  All of it was elliptical, with some crunches thrown in at the end of the week.  Not too shabby, and no issues with the hip either.

Today I went to my cardio/weight class over lunch.  I think I might try running 2 miles next time and see how the hip feels.

Cooking galore!

#15 - home cooked meals (51/143)

This week we really racked up the home cooked meals.  I realized I hadn't been counting everything.

1. Two Thursdays ago we had lemon chicken with butter noodles and Bruschetta.
2. Last Thursday we had Libia polo (ground beef and green bean mix) with rice.
3. Friday we grilled burgers and hotdogs.
4. Saturday we had an Italian themed dinner at a friends house.  It was pot luck and we brought homemade baked ziti.
5. Sunday we grilled steaks to go with the hand picked potatoes and onions.  As well as strawberry (hand picked) shortcake for dessert.

That's a lot of meals!

Sweet Berry Farms

I can't believe I didn't have this on my 101 list! 

This past Saturday, Malek, Karen and I decided to take the kids strawberry pickin' in Marble Falls (Thanks Amanda!).  Sweet Berry Farms had three strawberry patches to pick from, as well as onions and taters!  Unfortunately the Blackberries weren't ready yet.  The kids had a ball and Sabrina pretty much ate all the berries she picked.  :-)  Afterwards we treated ourselves to homemade berry ice-cream. 

Sunday evening we decided to try all our fresh produce that we picked.  We had a wonderful steak dinner with mashed potatoes and grilled onions, followed by fresh strawberry shortcake.  It was delish!
